- 1 cup of rice
- 2 cups of water
- 1 cup of mixed vegetables
- 1 tablespoon of olive oil

Instructions
- Rinse the rice under cold water.
- In a pot, bring water to a boil.
- Add rice and salt to boiling water.
- Reduce heat and cover the pot.
- Cook for 15 minutes or until water is absorbed.
- In a separate pan, heat olive oil.
- Add mixed vegetables and sauté for 5 minutes.
- Combine rice and vegetables, stir well, and serve.
