Description
A creamy and tangy dessert made with key lime juice and coconut milk.
Ingredients

- 1 cup coconut milk
- 1 cup heavy cream
- 1/2 cup sugar
- 1/4 cup key lime juice
- 2 teaspoons gelatin
- 2 tablespoons water
- 1/4 teaspoon salt
Instructions
- In a small bowl, sprinkle gelatin over water and let it bloom for 5 minutes.
- In a saucepan, combine coconut milk, heavy cream, sugar, and salt. Heat until sugar dissolves.
- Remove from heat and stir in key lime juice.
- Add bloomed gelatin to the mixture and stir until dissolved.
- Pour the mixture into serving cups and refrigerate for at least 4 hours until set.
Notes
- Serve with whipped cream on top.
- Garnish with lime zest for extra flavor.
- Can be made a day in advance.
