Description

A creamy and tangy dessert made with key lime juice and coconut milk.


Ingredients

  • 1 cup coconut milk
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1/4 cup key lime juice
  • 2 teaspoons gelatin
  • 2 tablespoons water
  • 1/4 teaspoon salt

Instructions

  1. In a small bowl, sprinkle gelatin over water and let it bloom for 5 minutes.
  2. In a saucepan, combine coconut milk, heavy cream, sugar, and salt. Heat until sugar dissolves.
  3. Remove from heat and stir in key lime juice.
  4. Add bloomed gelatin to the mixture and stir until dissolved.
  5. Pour the mixture into serving cups and refrigerate for at least 4 hours until set.

Notes

  • Serve with whipped cream on top.
  • Garnish with lime zest for extra flavor.
