- 2 cups almond flour
- 1/2 cup erythritol
- 1/4 cup unsalted butter, melted
- 4 large eggs
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix almond flour, erythritol, baking powder, and salt.
- In another bowl, whisk eggs, melted butter, lemon juice, and lemon zest.
- Combine the wet and dry ingredients.
- Pour the batter into a greased loaf pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let it cool before slicing.
Notes
- Store leftovers in an airtight container.
- Can be served with butter or cream cheese.
