- ½ cup unsweetened cocoa powder
- ¼ cup erythritol or preferred sweetener
- ½ cup unsalted butter, melted
- 1 ½ cups heavy cream
- 4 large eggs
- 1 teaspoon vanilla extract
- ¼ cup powdered erythritol
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix almond flour, cocoa powder, and erythritol.
- Add melted butter and combine until crumbly.
- Press the mixture into a pie pan to form the crust.
- Bake for 10-12 minutes, then cool.
- In a saucepan, whisk eggs and powdered erythritol over low heat until thickened.
- Remove from heat and stir in vanilla extract.
- In a separate bowl, whip heavy cream until soft peaks form.
- Fold the whipped cream into the egg mixture until combined.
- Pour the filling into the cooled crust and chill for at least 2 hours.
- Serve chilled and enjoy.
