Ingredients

  • 1 whole turkey (1214 pounds)
  • 1 cup jerk marinade
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 lime, juiced
  • 1 cup chicken broth

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a bowl, mix the jerk marinade, olive oil, garlic, salt, pepper, thyme, and lime juice.
  3. Rub the mixture all over the turkey, including under the skin.
  4. Place the turkey in a roasting pan.
  5. Pour chicken broth into the bottom of the pan.
  6. Cover the turkey with aluminum foil.
  7. Roast for 2 to 2.5 hours, removing the foil for the last 30 minutes to brown the skin.
  8. Check the internal temperature; it should reach 165°F (75°C).
  9. Let the turkey rest for 20 minutes before carving.

  • Marinate the turkey overnight for deeper flavor.
  • Adjust spice level of the marinade as desired.
