A simple and flavorful recipe for chicken served with jasmine rice.
Ingredients

- 2 cups jasmine rice
- 4 cups water
- 2 chicken breasts, diced
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Fresh parsley for garnish
Instructions
- Rinse the jasmine rice under cold water.
- In a pot, combine rice and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a skillet, heat olive oil over medium heat.
- Add onion and garlic. Sauté until soft.
- Add chicken and cook until browned.
- Stir in bell pepper, salt, pepper, paprika, and cumin.
- Cook for another 5-7 minutes until chicken is cooked through.
- Fluff the rice with a fork and serve chicken over rice.
- Garnish with fresh parsley.
Notes
- Adjust spices to your taste.
- Serve with a side of vegetables if desired.
- Store leftovers in an airtight container.
