Ingredients

  • 2 cups jasmine rice
  • 4 cups water
  • 2 chicken breasts, diced
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Fresh parsley for garnish

Instructions

  1. Rinse the jasmine rice under cold water.
  2. In a pot, combine rice and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. In a skillet, heat olive oil over medium heat.
  5. Add onion and garlic. Sauté until soft.
  6. Add chicken and cook until browned.
  7. Stir in bell pepper, salt, pepper, paprika, and cumin.
  8. Cook for another 5-7 minutes until chicken is cooked through.
  9. Fluff the rice with a fork and serve chicken over rice.
  10. Garnish with fresh parsley.
