Description

Traditional Japanese soba noodles served during New Year celebrations.


Ingredients

  • 200g soba noodles
  • 1 liter water
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 2 green onions, chopped
  • 1 sheet nori, cut into strips
  • Optional: tempura for garnish

Instructions

  1. Boil water in a pot.
  2. Add soba noodles and cook for 4-5 minutes.
  3. Drain and rinse noodles under cold water.
  4. In a bowl, mix soy sauce and mirin.
  5. Add noodles to the bowl and toss to coat.
  6. Garnish with green onions and nori.
  7. Serve hot or cold, with tempura if desired.

  • Use fresh soba for better texture.
  • Adjust soy sauce to taste.
  • Can be served in a hot broth if preferred.
