Description
Traditional Japanese soba noodles served during New Year celebrations.
Ingredients

- 200g soba noodles
- 1 liter water
- 2 tablespoons soy sauce
- 1 tablespoon mirin
- 2 green onions, chopped
- 1 sheet nori, cut into strips
- Optional: tempura for garnish
Instructions
- Boil water in a pot.
- Add soba noodles and cook for 4-5 minutes.
- Drain and rinse noodles under cold water.
- In a bowl, mix soy sauce and mirin.
- Add noodles to the bowl and toss to coat.
- Garnish with green onions and nori.
- Serve hot or cold, with tempura if desired.
Notes
- Use fresh soba for better texture.
- Adjust soy sauce to taste.
- Can be served in a hot broth if preferred.
