Ingredients

- 1 whole turkey (10–12 lbs)
- 2 cups jerk marinade
- 4 cups rice
- 2 cups peas
- 1 cup chopped scallions
- 1 cup chopped bell peppers
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons thyme
- 1 tablespoon allspice
- 1/4 cup vegetable oil
- Salt to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Marinate the turkey with jerk marinade for at least 4 hours.
- Place the turkey in a roasting pan and cover with foil.
- Roast the turkey for 2.5 to 3 hours, basting occasionally.
- In a separate pot, cook rice according to package instructions.
- Add peas and chopped vegetables to the rice during the last 10 minutes of cooking.
- Mix soy sauce, brown sugar, thyme, and allspice in a bowl.
- Serve turkey with rice and peas drizzled with sauce.
Notes
- Let the turkey rest for 30 minutes before carving.
- Adjust seasoning to your taste.
