A spicy and creamy chicken dish inspired by jalapeno poppers.
Ingredients

- 4 chicken breasts
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup diced jalapenos
- 1/2 cup breadcrumbs
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix cream cheese, cheddar cheese, and jalapenos.
- Cut a pocket in each chicken breast and stuff with the cheese mixture.
- In another bowl, mix breadcrumbs, garlic powder, and onion powder.
- Coat each stuffed chicken breast with olive oil and then with the breadcrumb mixture.
- Place chicken in a baking dish and bake for 25-30 minutes.
- Check the internal temperature reaches 165°F (75°C) before serving.
Notes
- For less heat, remove seeds from jalapenos.
- Serve with a side of ranch dressing.
- Store leftovers in an airtight container for up to 3 days.
