A spicy and savory cornbread made with jalapenos.
Ingredients

- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1/2 cup diced jalapenos
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix cornmeal, flour, baking powder, and salt.
- In another bowl, whisk together milk, oil, and egg.
- Combine wet and dry ingredients.
- Fold in jalapenos and cheese.
- Pour batter into a greased baking dish.
- Bake for 20-25 minutes or until golden brown.
- Let cool before serving.
Notes
- Adjust jalapeno quantity for desired spice level.
- Serve warm with butter.
- Best eaten fresh but can be stored for a few days.
