Ingredients

- 1 lb Italian sausage
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can diced tomatoes (14.5 oz)
- 1 cup carrots, sliced
- 1 cup zucchini, diced
- 1 cup spinach
- 1 tsp Italian seasoning
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned.
- Add the chopped onion and minced garlic. Cook until onion is translucent.
- Pour in the chicken broth and diced tomatoes.
- Add carrots, zucchini, and Italian seasoning. Bring to a boil.
- Reduce heat and let it simmer for 20 minutes.
- Stir in the spinach and cook for an additional 5 minutes.
- Season with salt and pepper to taste. Serve hot.
Notes
- Feel free to add other vegetables like bell peppers or potatoes.
- You can use turkey sausage for a leaner option.
- This soup can be stored in the refrigerator for up to 3 days.
