Ingredients

- 3–4 pounds chuck roast
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 carrots, chopped
- 2 stalks celery, chopped
- 1 can (14 oz) diced tomatoes
- 1 cup beef broth
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Season the roast with salt and pepper.
- Brown the roast on all sides.
- Add onion, garlic, carrots, and celery; sauté for 5 minutes.
- Stir in diced tomatoes, beef broth, oregano, and basil.
- Bring to a simmer, then cover and cook on low heat for 3-4 hours.
- Remove the roast and let it rest before slicing.
- Serve with vegetables and sauce from the pot.
Notes
- Use fresh herbs for more flavor.
- You can add potatoes for a complete meal.
- Store leftovers in the fridge for up to 3 days.
