Ingredients

  • 8 oz cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup bell pepper, diced
  • 1/4 cup fresh basil, chopped
  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook cheese tortellini according to package instructions. Drain and cool.
  2. In a large bowl, combine tortellini, tomatoes, cucumber, onion, olives, bell pepper, and basil.
  3. In a separate bowl, whisk together olive oil, vinegar, Italian seasoning, salt, and pepper.
  4. Pour dressing over the pasta salad and toss to combine.
  5. Refrigerate for at least 30 minutes before serving.
