A refreshing Italian pasta salad featuring cheese tortellini, vegetables, and a zesty dressing.
Ingredients

- 8 oz cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, chopped
- 1/2 cup black olives, sliced
- 1/2 cup bell pepper, diced
- 1/4 cup fresh basil, chopped
- 1/3 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Cook cheese tortellini according to package instructions. Drain and cool.
- In a large bowl, combine tortellini, tomatoes, cucumber, onion, olives, bell pepper, and basil.
- In a separate bowl, whisk together olive oil, vinegar, Italian seasoning, salt, and pepper.
- Pour dressing over the pasta salad and toss to combine.
- Refrigerate for at least 30 minutes before serving.
Notes
- Feel free to add other vegetables of your choice.
- This salad can be made a day ahead for better flavor.
- Store leftovers in the refrigerator for up to 3 days.
