Description
These cookies combine the flavors of Italian cannoli with the classic thumbprint cookie. They are filled with sweet ricotta cheese and chocolate chips.

- 1 cup ricotta cheese
- ½ cup powdered sugar
- ½ cup mini chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream the butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing well.
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to the wet mixture, mixing until combined.
- Roll dough into 1-inch balls and place on a baking sheet.
- Make an indentation in the center of each ball with your thumb.
- Bake for 12-15 minutes or until lightly golden.
- In a separate bowl, mix ricotta cheese, powdered sugar, and chocolate chips.
- Fill each thumbprint with the ricotta mixture after cookies cool.
Notes

- Allow cookies to cool completely before filling.
