  • 2 large eggs

  • 1 cup boiling water
  • 1 cup sweetened shredded coconut
  • 1/2 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add buttermilk, vegetable oil, eggs, and vanilla. Mix until smooth.
  4. Stir in boiling water until the batter is well combined.
  5. Pour the batter into cupcake liners, filling them two-thirds full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cupcakes cool completely before frosting.
  8. For the frosting, mix coconut and pecans into your favorite chocolate frosting and spread on cooled cupcakes.
