Instant Pot Lasagna Soup is a comforting dish that combines the rich flavors of traditional lasagna into a hearty soup, featuring ground beef, tomatoes, and aromatic herbs, all cooked together in one pot for a quick and easy meal.


Ingredients

  • Ground beef: 1 lb (450 g)
  • Onion: 1 medium, diced
  • Garlic: 3 cloves, minced
  • Crushed tomatoes: 28 oz (800 g) can
  • Tomato sauce: 15 oz (425 g) can
  • Italian seasoning: 2 teaspoons
  • Lasagna noodles: 8 oz (225 g), broken into pieces
  • Ricotta cheese: 15 oz (425 g)
  • Shredded mozzarella cheese: 2 cups (200 g)
  • Grated Parmesan cheese: 1/2 cup (50 g)
  • Fresh basil: 1/4 cup, chopped
  • Salt and black pepper: to taste
  • Olive oil: 1 tablespoon

Instructions

  1. Set the Instant Pot to the sauté function and heat the olive oil. Add the ground beef and cook until browned, about 5-7 minutes. Season with salt and black pepper.
  2. Add the diced onion and minced garlic, sauté for 2-3 minutes until the onion is translucent.
  3. Stir in the crushed tomatoes, tomato sauce, and Italian seasoning. Mix well.
  4. Add the broken lasagna noodles, ensuring they are submerged in the liquid without stirring.
  5. Close the lid, set the valve to sealing, and cook on high pressure for 5 minutes. Allow for a natural release for 5 minutes, then switch to venting.
  6. Open the lid, stir the soup, and mix in the ricotta cheese and half of the shredded mozzarella cheese until well combined.
  7. Ladle the soup into bowls, top with remaining mozzarella cheese and grated Parmesan cheese, and garnish with fresh basil.
