Ingredients
- Ground beef: 1 lb (450 g)
- Onion: 1 medium, diced
- Garlic: 3 cloves, minced
- Crushed tomatoes: 28 oz (800 g) can
- Tomato sauce: 15 oz (425 g) can
- Italian seasoning: 2 teaspoons
- Lasagna noodles: 8 oz (225 g), broken into pieces
- Ricotta cheese: 15 oz (425 g)
- Shredded mozzarella cheese: 2 cups (200 g)
- Grated Parmesan cheese: 1/2 cup (50 g)
- Fresh basil: 1/4 cup, chopped
- Salt and black pepper: to taste
- Olive oil: 1 tablespoon
Instructions
- Set the Instant Pot to the sauté function and heat the olive oil. Add the ground beef and cook until browned, about 5-7 minutes. Season with salt and black pepper.
- Add the diced onion and minced garlic, sauté for 2-3 minutes until the onion is translucent.
- Stir in the crushed tomatoes, tomato sauce, and Italian seasoning. Mix well.
- Add the broken lasagna noodles, ensuring they are submerged in the liquid without stirring.
- Close the lid, set the valve to sealing, and cook on high pressure for 5 minutes. Allow for a natural release for 5 minutes, then switch to venting.
- Open the lid, stir the soup, and mix in the ricotta cheese and half of the shredded mozzarella cheese until well combined.
- Ladle the soup into bowls, top with remaining mozzarella cheese and grated Parmesan cheese, and garnish with fresh basil.
Notes
- Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months.
