Description

A flavorful dish made with chicken, sausage, rice, and spices, cooked in an instant pot.


Ingredients

  • 1 lb chicken breast, diced
  • 1 lb smoked sausage, sliced
  • 1 cup long-grain rice
  • 1 can diced tomatoes (14.5 oz)
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste

Instructions

  1. Turn the instant pot to sauté mode and add sausage. Cook until browned.
  2. Add chicken and cook until no longer pink.
  3. Stir in onion, bell pepper, and garlic. Cook until softened.
  4. Add rice, diced tomatoes, chicken broth, Cajun seasoning, salt, and pepper. Stir well.
  5. Close the lid and set to manual high pressure for 10 minutes.
  6. After cooking, allow pressure to release naturally for 5 minutes, then quick release any remaining pressure.
  7. Fluff the jambalaya with a fork and serve hot.

Notes

  • Adjust the spiciness by modifying the Cajun seasoning.
  • You can add shrimp for extra flavor.
  • Store leftovers in an airtight container in the fridge.
