Description
A flavorful dish made with chicken, sausage, rice, and spices, cooked in an instant pot.
Ingredients

- 1 lb chicken breast, diced
- 1 lb smoked sausage, sliced
- 1 cup long-grain rice
- 1 can diced tomatoes (14.5 oz)
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
Instructions
- Turn the instant pot to sauté mode and add sausage. Cook until browned.
- Add chicken and cook until no longer pink.
- Stir in onion, bell pepper, and garlic. Cook until softened.
- Add rice, diced tomatoes, chicken broth, Cajun seasoning, salt, and pepper. Stir well.
- Close the lid and set to manual high pressure for 10 minutes.
- After cooking, allow pressure to release naturally for 5 minutes, then quick release any remaining pressure.
- Fluff the jambalaya with a fork and serve hot.
Notes
- Adjust the spiciness by modifying the Cajun seasoning.
- You can add shrimp for extra flavor.
- Store leftovers in an airtight container in the fridge.
