Description

A delicious treat made with two cookies and ice cream in between.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups chocolate chips
  • 2 pints of your favorite ice cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, baking soda, and salt.
  3. In another bowl, cream together butter, granulated sugar, and brown sugar.
  4. Add eggs and vanilla to the butter mixture and mix well.
  5. Gradually add dry ingredients to the wet mixture.
  6. Fold in chocolate chips.
  7. Drop spoonfuls onto a baking sheet.
  8. Bake for 10-12 minutes until golden.
  9. Let cookies cool completely.
  10. Scoop ice cream onto a cookie and top with another cookie.

Notes

  • Use any flavor of ice cream you prefer.
  • Cookies can be made ahead of time and stored.
  • For a fun twist, add sprinkles or nuts to the ice cream.
