- 4 corn tortillas
- 4 large eggs
- 1 cup salsa
- 1/2 cup refried beans
- 1/4 cup chopped cilantro
- 1/2 avocado, sliced
- Salt to taste
Instructions
- Heat the refried beans in a small pot over low heat.
- In a skillet, warm the tortillas until soft.
- Fry the eggs sunny-side up in the skillet.
- Top each tortilla with a layer of refried beans.
- Add a fried egg on top of the beans.
- Spoon salsa over the eggs.
- Garnish with cilantro and avocado slices.
- Season with salt to taste.
Notes
- Adjust spice level by choosing mild or hot salsa.
- Serve with additional avocado and cilantro if desired.
- Can be made vegetarian by omitting any meat.
