  • 1 whole turkey (1214 lbs)
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 2 cups chicken broth
  • 1 onion, quartered
  • 1 lemon, quartered
  • 4 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 4 sprigs fresh sage

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Remove the turkey giblets and pat the turkey dry with paper towels.
  3. Rub the softened butter all over the turkey, including under the skin.
  4. Season the turkey with salt and pepper inside and out.
  5. Stuff the cavity with onion, lemon, and herbs.
  6. Place the turkey on a roasting rack in a roasting pan.
  7. Pour chicken broth into the bottom of the pan.
  8. Cover the turkey with aluminum foil.
  9. Roast the turkey for about 2.5 to 3 hours.
  10. Remove the foil for the last 30 minutes to brown the skin.
  11. Check the internal temperature; it should reach 165°F (75°C).
  12. Let the turkey rest for 30 minutes before carving.
