Description

Hoppin’ John is a traditional Southern dish made with black-eyed peas and rice.


Ingredients

  • 1 cup black-eyed peas
  • 1 cup long-grain rice
  • 4 cups chicken broth
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 2 tablespoons olive oil
  • 1 bay leaf

Instructions

  1. Soak black-eyed peas overnight in water.
  2. Drain and rinse peas.
  3. Heat olive oil in a pot over medium heat.
  4. Add onion, bell pepper, and garlic; sauté until soft.
  5. Add black-eyed peas, chicken broth, salt, and spices.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Add rice and bay leaf; stir to combine.
  8. Cover and cook for 20 minutes or until rice is tender.
  9. Remove bay leaf before serving.

Notes

  • Serve with cornbread for a complete meal.
  • Can add diced ham or sausage for extra flavor.
