Description

A traditional Southern dish made with black-eyed peas and rice.


Ingredients

  • 1 cup black-eyed peas
  • 1 cup long-grain white rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cayenne pepper
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil
  • Green onions for garnish

Instructions

  1. Soak black-eyed peas overnight in water.
  2. Drain and rinse the peas.
  3. In a pot, heat olive oil over medium heat.
  4. Add onion and garlic, sauté until soft.
  5. Add black-eyed peas and chicken broth, bring to a boil.
  6. Reduce heat, cover, and simmer for 30 minutes.
  7. Add rice, cayenne, salt, and black pepper.
  8. Cover and cook for 20 minutes or until rice is tender.
  9. Fluff with a fork and serve garnished with green onions.

Notes

  • Adjust seasoning to your preference.
  • Add cooked ham or sausage for extra flavor.
  • Can be made vegetarian by using vegetable broth.
