Description
A traditional Southern dish made with black-eyed peas and rice.
Ingredients

- 1 cup black-eyed peas
- 1 cup long-grain white rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon cayenne pepper
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
- Green onions for garnish
Instructions
- Soak black-eyed peas overnight in water.
- Drain and rinse the peas.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add black-eyed peas and chicken broth, bring to a boil.
- Reduce heat, cover, and simmer for 30 minutes.
- Add rice, cayenne, salt, and black pepper.
- Cover and cook for 20 minutes or until rice is tender.
- Fluff with a fork and serve garnished with green onions.
Notes
- Adjust seasoning to your preference.
- Add cooked ham or sausage for extra flavor.
- Can be made vegetarian by using vegetable broth.
