Description

A delicious honeybun carrot cake filled with creamy cheesecake.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 cup vegetable oil
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup honey

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, mix flour, sugar, baking powder, baking soda, cinnamon, and salt.
  4. In another bowl, whisk eggs and oil together.
  5. Add the egg mixture to the dry ingredients and mix until combined.
  6. Stir in grated carrots, pineapple, and walnuts.
  7. Divide the batter evenly between the prepared pans.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Let cakes cool in pans for 10 minutes, then transfer to wire racks.
  10. In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  11. Spread cream cheese mixture on top of one cake layer, drizzle with honey.
  12. Top with the second cake layer.

Notes

  • Store leftovers in the refrigerator.
  • For added flavor, you can add raisins to the batter.
  • Dust with powdered sugar before serving.
