  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Add garlic and cook for another minute.
  4. Pour in vegetable broth and diced tomatoes.
  5. Add thyme, bay leaf, salt, and pepper. Bring to a boil.
  6. Reduce heat and let simmer for 20 minutes.
  7. Add mixed vegetables and cook for an additional 10 minutes.
  8. Remove bay leaf before serving.
  9. Garnish with fresh parsley.
