Homemade oatmeal cream pies are soft cookies filled with sweet cream filling. They are a classic treat loved by many.

- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup marshmallow fluff
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract for filling
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together butter, brown sugar, and granulated sugar.
- Add the egg and vanilla extract, mixing well.
- In another bowl, combine oats, flour, baking soda, and salt.
- Gradually mix dry ingredients into the wet mixture.
- Drop spoonfuls of the dough onto a baking sheet.
- Bake for 10-12 minutes until golden brown.
- Let cookies cool before adding filling.
- For the filling, mix marshmallow fluff, powdered sugar, and vanilla extract.
- Spread filling onto half of the cookies and top with the other half.
Notes
- Store cookies in an airtight container.
- These cookies can be frozen for later use.
- Adjust sweetness by adding more or less sugar in the filling.
