Ingredients

  • 1 cup unsweetened cocoa powder
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup boiling water
  • 1 1/2 cups shredded coconut
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a bowl, mix flour, baking soda, and salt.
  4. In another bowl, cream butter and sugar until fluffy.
  5. Add eggs one at a time, then mix in vanilla.
  6. Alternate adding the flour mixture and buttermilk, starting and ending with flour.
  7. Stir in boiling water until well combined.
  8. Pour batter into prepared pans.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
  10. Let cakes cool in pans for 10 minutes, then transfer to wire racks.
  11. Prepare frosting by mixing coconut, pecans, sugar, and evaporated milk in a saucepan and cook until thickened.
  12. Spread frosting between layers and on top of the cake.
