Ingredients

- 2 cups cooked rice
- 1 cup mixed vegetables
- 2 eggs
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 green onions, chopped
- Salt to taste
Instructions
- Heat vegetable oil in a pan over medium heat.
- Add mixed vegetables and stir-fry for 2-3 minutes.
- Push the vegetables to the side and scramble the eggs in the pan.
- Add cooked rice to the pan.
- Pour soy sauce over the rice and mix well.
- Add green onions and salt to taste.
- Stir everything together for another 2-3 minutes.
- Serve hot.

- Use day-old rice for better texture.
- Customize with your choice of protein.
