Ingredients

- 2 cups brussels sprouts, halved
- 2 cups carrots, chopped
- 2 cups sweet potatoes, cubed
- 1 red onion, cut into wedges
- 4 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the brussels sprouts, carrots, sweet potatoes, and red onion.
- Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and thyme.
- Toss to coat the vegetables evenly.
- Spread the vegetables in a single layer on a baking sheet.
- Roast for 25-30 minutes, stirring halfway through, until tender and golden brown.
- Remove from the oven and serve warm.
