Description

Delicious high hat chocolate cherry cream cupcakes topped with fluffy meringue and chocolate.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup cherry pie filling
  • 2 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add butter, eggs, vanilla, and buttermilk. Mix until smooth.
  4. Fill cupcake liners halfway with batter. Add a spoonful of cherry filling on top.
  5. Bake for 20-25 minutes. Let cool completely.
  6. Whip egg whites and cream of tartar until soft peaks form. Gradually add sugar and beat until stiff peaks form.
  7. Pipe meringue on top of each cupcake.
  8. Melt chocolate chips and drizzle over the meringue.
  9. Let set before serving.

  • Adjust sweetness by adding more or less sugar in the meringue.
