- 1 cup lentils
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 carrots, diced
- 2 tomatoes, chopped
- 4 cups vegetable broth
- 1 tablespoon olive oil

- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse the lentils under cold water.
- In a large pot, heat olive oil over medium heat.
- Add onion and garlic, and sauté until softened.
- Stir in bell pepper and carrots, cooking for another 5 minutes.
- Add tomatoes, lentils, broth, cumin, chili powder, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Check lentils for tenderness and adjust seasoning if necessary.
- Garnish with fresh cilantro before serving.
