  • Onion: 1 medium, diced
  • Garlic: 3 cloves, minced
  • Chili powder: 2 tablespoons
  • Cumin: 1 tablespoon
  • Salt: 1 teaspoon (or to taste)
  • Pepper: 1/2 teaspoon (or to taste)
  • Olive oil: 1 tablespoon
  • Bell pepper: 1 medium, diced (optional)
  • Jalapeños: diced (optional)
  • Cayenne pepper: a pinch (optional)
  • Fresh cilantro: for garnish (optional)
  • Cheddar cheese: shredded (optional)
  • Sour cream: a dollop (optional)
  • Avocado: diced (optional)

Instructions

  1. Prepare all ingredients by dicing the onion and bell pepper, mincing the garlic, and draining and rinsing the beans.
  2. In a large pot, heat olive oil over medium heat and brown the ground beef for 5-7 minutes.
  3. Drain excess fat, then add diced onion and bell pepper, sautéing for about 5 minutes until the onion is translucent.
  4. Add minced garlic and cook for an additional minute, then stir in chili powder, cumin, salt, and pepper.
  5. Pour in diced tomatoes and add the drained beans, stirring to combine. Bring to a boil, then reduce heat and simmer for at least 30 minutes.
  6. Taste and adjust seasoning as needed, then serve garnished with fresh cilantro if desired.
