Instructions
- Prepare all ingredients by washing and chopping the vegetables.
- In a large pot, heat olive oil over medium heat and brown the beef mince for 5-6 minutes.
- Add chopped onion, diced carrots, and diced celery; sauté for 5-7 minutes.
- Stir in minced garlic and cook for an additional minute.
- Add canned diced tomatoes and vegetable broth; bring to a gentle simmer.
- Stir in kidney beans and pasta; cook according to pasta package instructions (about 8-10 minutes).
- Taste and adjust seasoning before serving; garnish with fresh parsley if desired.
