Ingredients

  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 avocado, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes or until quinoa is fluffy.
  4. Remove from heat and let it cool.
  5. In a large bowl, mix quinoa, tomatoes, cucumber, bell pepper, and avocado.
  6. Drizzle with olive oil and lemon juice.
  7. Add salt and pepper to taste.
  8. Garnish with feta cheese.

  • Serve chilled or at room temperature.
