Ingredients

  • 1 cup broccoli florets
  • 1 red bell pepper, diced
  • 1 cup chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes, or until quinoa is cooked.
  4. In a pan, heat olive oil over medium heat.
  5. Add broccoli and red bell pepper. Cook for 5 minutes.
  6. Add chickpeas, garlic powder, salt, and pepper. Stir well.
  7. Combine the vegetable mixture with quinoa. Serve warm.

  • Feel free to add your favorite vegetables.
  • You can substitute quinoa with brown rice.
