Ingredients

			- 1 cup quinoa
 - 2 cups vegetable broth
 - 1 cup broccoli florets
 - 1 red bell pepper, diced
 - 1 cup chickpeas, drained and rinsed
 - 2 tablespoons olive oil
 - 1 teaspoon garlic powder
 - Salt and pepper to taste
 
Instructions
- Rinse the quinoa under cold water.
 - In a pot, combine quinoa and vegetable broth. Bring to a boil.
 - Reduce heat and simmer for 15 minutes, or until quinoa is cooked.
 - In a pan, heat olive oil over medium heat.
 - Add broccoli and red bell pepper. Cook for 5 minutes.
 - Add chickpeas, garlic powder, salt, and pepper. Stir well.
 - Combine the vegetable mixture with quinoa. Serve warm.
 
Notes
- Feel free to add your favorite vegetables.
 - You can substitute quinoa with brown rice.
 - Store leftovers in an airtight container in the fridge.
