Ingredients

- 2 pounds of chicken breast
- 1 cup of diced carrots
- 1 cup of diced celery
- 1 onion, chopped
- 4 cups of low-sodium chicken broth
- 2 cups of spinach
- 1 teaspoon of garlic powder
- 1 teaspoon of dried thyme
- Salt and pepper to taste
Instructions
- Place chicken in the crockpot.
- Add carrots, celery, and onion.
- Pour in chicken broth.
- Add garlic powder, thyme, salt, and pepper.
- Cover and cook on low for 6-8 hours.
- In the last 30 minutes, add spinach.
- Shred the chicken before serving.
Notes
- You can add other vegetables of your choice.
- Serve with whole grain bread for a complete meal.
- This dish can be frozen for later use.
