Ingredients

- 4 boneless, skinless chicken breasts
- 1 cup low-sodium chicken broth
- 1 cup diced tomatoes
- 1 cup chopped bell peppers
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon oregano
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the crockpot.
- Add the chicken broth, diced tomatoes, bell peppers, onion, and garlic.
- Season with paprika, oregano, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 4 hours.
- Shred the chicken with two forks before serving.

- Serve with brown rice or quinoa for a complete meal.
- Store leftovers in the refrigerator for up to 3 days.
