Ingredients

- 8 ounces whole wheat macaroni
- 2 cups cauliflower florets
- 1 cup low-fat milk
- 1 cup shredded reduced-fat cheddar cheese
- 1/2 cup plain Greek yogurt
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the macaroni according to package instructions. Drain and set aside.
- Steam the cauliflower florets until tender.
- In a blender, combine steamed cauliflower, milk, cheddar cheese, yogurt, garlic powder, onion powder, salt, and pepper. Blend until smooth.
- Mix the cheese sauce with the cooked macaroni.
- Transfer the mixture to a baking dish. Sprinkle Parmesan cheese on top.
- Bake for 20 minutes or until golden and bubbly.
- Let it cool for a few minutes before serving.
Notes
- You can add cooked vegetables for extra nutrition.
