Ingredients

  • 2 cups cauliflower florets
  • 1 cup low-fat milk
  • 1 cup shredded reduced-fat cheddar cheese
  • 1/2 cup plain Greek yogurt
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the macaroni according to package instructions. Drain and set aside.
  3. Steam the cauliflower florets until tender.
  4. In a blender, combine steamed cauliflower, milk, cheddar cheese, yogurt, garlic powder, onion powder, salt, and pepper. Blend until smooth.
  5. Mix the cheese sauce with the cooked macaroni.
  6. Transfer the mixture to a baking dish. Sprinkle Parmesan cheese on top.
  7. Bake for 20 minutes or until golden and bubbly.
  8. Let it cool for a few minutes before serving.
