A light and healthy version of eggplant parmesan made in an air fryer.


Ingredients

  • 2 medium eggplants, sliced
  • 1 cup whole wheat breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Slice eggplants and sprinkle with salt. Let sit for 30 minutes to remove moisture.
  3. Rinse and pat dry the eggplant slices.
  4. In a bowl, mix breadcrumbs, parmesan, salt, and pepper.
  5. Brush eggplant slices with olive oil and coat with the breadcrumb mixture.
  6. Arrange coated eggplant slices in the air fryer basket in a single layer.
  7. Cook for 10-12 minutes or until golden brown, flipping halfway through.
  8. In a baking dish, layer marinara sauce, air-fried eggplant, and mozzarella cheese. Repeat layers.
  9. Air fry the layered dish for another 5-7 minutes until the cheese melts.
