Description
A light and healthy version of eggplant parmesan made in an air fryer.
Ingredients

- 2 medium eggplants, sliced
- 1 cup whole wheat breadcrumbs
- 1/2 cup grated parmesan cheese
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 375°F (190°C).
- Slice eggplants and sprinkle with salt. Let sit for 30 minutes to remove moisture.
- Rinse and pat dry the eggplant slices.
- In a bowl, mix breadcrumbs, parmesan, salt, and pepper.
- Brush eggplant slices with olive oil and coat with the breadcrumb mixture.
- Arrange coated eggplant slices in the air fryer basket in a single layer.
- Cook for 10-12 minutes or until golden brown, flipping halfway through.
- In a baking dish, layer marinara sauce, air-fried eggplant, and mozzarella cheese. Repeat layers.
- Air fry the layered dish for another 5-7 minutes until the cheese melts.
Notes
- Adjust cooking time based on the thickness of the eggplant slices.
- Serve with fresh basil for added flavor.
