Ingredients

- 1 head cauliflower, riced
- 1 cup bell peppers, diced
- 1 cup broccoli florets
- 1 cup chickpeas, drained
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt to taste
- Pepper to taste
Instructions
- Preheat your air fryer to 400°F (200°C).
- Rinse and rice the cauliflower using a food processor.
- In a large bowl, combine cauliflower rice, bell peppers, broccoli, and chickpeas.
- Add olive oil, garlic powder, onion powder, salt, and pepper. Mix well.
- Place the mixture in the air fryer basket.
- Air fry for 15 minutes, shaking halfway through.
- Remove from the air fryer and serve warm.
