Ingredients

  • 1 head cauliflower, riced
  • 1 cup bell peppers, diced
  • 1 cup broccoli florets
  • 1 cup chickpeas, drained
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. Rinse and rice the cauliflower using a food processor.
  3. In a large bowl, combine cauliflower rice, bell peppers, broccoli, and chickpeas.
  4. Add olive oil, garlic powder, onion powder, salt, and pepper. Mix well.
  5. Place the mixture in the air fryer basket.
  6. Air fry for 15 minutes, shaking halfway through.
  7. Remove from the air fryer and serve warm.
