Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.

  4. In another bowl, cream butter and sugar until light.
  5. Add eggs one at a time, mixing well.
  6. Gradually add flour mixture and coconut milk, blending until smooth.
  7. Stir in crushed pineapple and shredded coconut.
  8. Pour batter into prepared pans.
  9. Bake for 25-30 minutes or until a toothpick comes out clean.
  10. Cool in pans for 10 minutes, then transfer to wire racks.
  11. Frost with whipped cream cheese frosting once cooled.
