- 1 1/2 cups sugar
- 1 cup unsweetened coconut milk
- 1/2 cup crushed pineapple, drained
- 1/2 cup shredded coconut
- 1/2 cup unsalted butter, softened

- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- In a bowl, mix flour, baking powder, and salt.
- In another bowl, cream butter and sugar until light.
- Add eggs one at a time, mixing well.
- Gradually add flour mixture and coconut milk, blending until smooth.
- Stir in crushed pineapple and shredded coconut.
- Pour batter into prepared pans.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Cool in pans for 10 minutes, then transfer to wire racks.
- Frost with whipped cream cheese frosting once cooled.

- Ensure the pineapple is well-drained to avoid a soggy cake.
- Use full-fat cream cheese for better frosting texture.
- Chill the frosting before applying for easier spreading.
