Description
A hearty Hawaiian chicken soup with long rice.
Ingredients

- 1 pound chicken breast, diced
- 4 cups chicken broth
- 1 cup long rice (bean thread noodles)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, chopped
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- In a pot, heat sesame oil over medium heat.
- Add onion and garlic, sauté until fragrant.
- Add chicken and cook until browned.
- Stir in carrots and celery, cook for 5 minutes.
- Add chicken broth and bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add long rice and soy sauce, cook for an additional 5 minutes.
- Season with salt and pepper to taste.
- Serve hot.

- Adjust salt to your preference.
- Serve with green onions for garnish.
