Ingredients

  • 1 pound chicken thighs, boneless and skinless
  • 6 cups chicken broth
  • 1 package long rice noodles (8 ounces)
  • 2 cups spinach, fresh
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat sesame oil over medium heat.
  2. Add onion and garlic, sauté until fragrant.
  3. Add chicken thighs and cook until browned.
  4. Pour in chicken broth, bring to a boil.
  5. Add long rice noodles and cook for 5 minutes.
  6. Stir in spinach and soy sauce, cook until spinach wilts.
  7. Season with salt and pepper, serve hot.
