Description
A comforting Hawaiian-style chicken long rice soup.
Ingredients

- 1 pound chicken thighs, boneless and skinless
- 6 cups chicken broth
- 1 package long rice noodles (8 ounces)
- 2 cups spinach, fresh
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- In a large pot, heat sesame oil over medium heat.
- Add onion and garlic, sauté until fragrant.
- Add chicken thighs and cook until browned.
- Pour in chicken broth, bring to a boil.
- Add long rice noodles and cook for 5 minutes.
- Stir in spinach and soy sauce, cook until spinach wilts.
- Season with salt and pepper, serve hot.
Notes
- Use leftover chicken for quicker preparation.
- Adjust seasoning to your taste.
- Garnish with green onions if desired.
