- 4 chicken thighs
- 1 cup pineapple chunks
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 teaspoon garlic powder
- 1 teaspoon ginger, minced
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix soy sauce, honey, garlic powder, ginger, salt, and pepper.
- Add chicken thighs to the bowl and coat them with the marinade.
- Place chicken on a sheet pan.
- Add pineapple and bell peppers around the chicken.
- Drizzle any remaining marinade over the top.
- Bake for 25-30 minutes or until chicken is cooked through.
- Serve warm and enjoy.
