A refreshing Hawaiian chicken salad with tropical flavors.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup pineapple chunks
- 1/2 cup red bell pepper, diced
- 1/2 cup celery, diced
- 1/4 cup green onions, sliced
- 1/2 cup mayonnaise
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine shredded chicken, pineapple, red bell pepper, celery, and green onions.
- In a separate bowl, mix mayonnaise and lime juice.
- Pour the mayonnaise mixture over the chicken mixture.
- Stir well to combine.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Serve on a bed of lettuce or as a sandwich filling.
- You can add nuts for extra crunch.
- Store leftovers in an airtight container for up to 3 days.
