A delightful Hawaiian carrot pineapple cake with tropical flavors.
Ingredients

- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 4 large eggs
- 1 cup vegetable oil
- 2 cups grated carrots
- 1 cup crushed pineapple, drained
- 1 cup chopped walnuts
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- In a large bowl, mix flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, beat eggs and add oil and vanilla.
- Combine wet and dry ingredients.
- Fold in carrots, pineapple, and walnuts.
- Pour batter into prepared pans.
- Bake for 30-35 minutes, or until a toothpick comes out clean.
- Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
Notes
- Store in an airtight container.
- Tastes better the next day.
- Can be frosted with cream cheese frosting.
