Ingredients

  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 cup vegetable oil
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, mix flour, sugar, baking powder, baking soda, cinnamon, and salt.
  4. In another bowl, beat eggs and add oil and vanilla.
  5. Combine wet and dry ingredients.
  6. Fold in carrots, pineapple, and walnuts.
  7. Pour batter into prepared pans.
  8. Bake for 30-35 minutes, or until a toothpick comes out clean.
  9. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
