Description

Hasselback potatoes are thinly sliced, roasted potatoes that are crispy on the outside and tender on the inside.


Ingredients

  • 4 medium russet potatoes
  • 3 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 3 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 1/2 cup grated parmesan cheese

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the potatoes.
  3. Make several evenly spaced slices along the length of each potato, stopping before cutting all the way through.
  4. Place the potatoes on a baking sheet.
  5. Drizzle olive oil over the potatoes, making sure to get it into the slices.
  6. Sprinkle salt, pepper, garlic, and rosemary over the potatoes.
  7. Bake for 45-55 minutes until crispy and golden.
  8. Sprinkle parmesan cheese on top and bake for an additional 5 minutes.
