Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 avocado, sliced
  • 1/4 cup red onion, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, avocado, and red onion.
  6. Add cooled quinoa to the vegetable mixture.
  7. Drizzle with olive oil and lemon juice.
  8. Toss gently to combine.
  9. Top with feta cheese and season with salt and pepper.

Notes

  • Serve chilled or at room temperature.
  • Can add grilled chicken or chickpeas for extra protein.
