Ingredients

  • 1 whole turkey (1012 lbs)
  • 1 cup marinade (citrus and spices)
  • 4 cups rice
  • 2 cups black beans
  • 1 cup corn
  • 1/2 cup green onions
  • 1/2 cup bell peppers
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Marinate the turkey overnight in the citrus marinade.
  3. Place the turkey in a roasting pan and cover it.
  4. Roast the turkey for about 3 hours, basting occasionally.
  5. Cook the rice according to package instructions.
  6. In a pan, heat olive oil and sauté green onions and bell peppers.
  7. Add black beans and corn to the sautéed vegetables.
  8. Serve turkey with rice and bean mixture.
