Guinness Braised Beef Pot Pie: 7 Comforting Delights

Description

A hearty pot pie filled with tender beef braised in Guinness, vegetables, and a flaky crust.


Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 1 can (14.9 oz) Guinness beer
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 2 teaspoons dried thyme
  • 1 tablespoon Worcestershire sauce
  • 1 cup frozen peas
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 package pie crusts (2 crusts)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat olive oil in a large pot over medium heat.
  3. Add beef and brown on all sides. Remove from pot.
  4. Add onion, carrots, celery, and garlic to the pot. Cook until softened.
  5. Stir in tomato paste, flour, thyme, and Worcestershire sauce.
  6. Add Guinness and beef broth. Bring to a boil.
  7. Return beef to the pot. Reduce heat and simmer for 1.5 hours.
  8. Stir in frozen peas. Season with salt and pepper.
  9. Transfer filling to a pie dish.
  10. Cover with pie crust and cut slits for steam.
  11. Bake for 30-35 minutes or until golden brown.

Notes

  • Let the pie cool for 10 minutes before serving.
  • Serve with a side salad for a complete meal.
