Description
A hearty pot pie filled with tender beef braised in Guinness, vegetables, and a flaky crust.
Ingredients

- 2 pounds beef chuck, cut into cubes
- 1 can (14.9 oz) Guinness beer
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 4 cups beef broth
- 2 teaspoons dried thyme
- 1 tablespoon Worcestershire sauce
- 1 cup frozen peas
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
- 1 package pie crusts (2 crusts)
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Heat olive oil in a large pot over medium heat.
- Add beef and brown on all sides. Remove from pot.
- Add onion, carrots, celery, and garlic to the pot. Cook until softened.
- Stir in tomato paste, flour, thyme, and Worcestershire sauce.
- Add Guinness and beef broth. Bring to a boil.
- Return beef to the pot. Reduce heat and simmer for 1.5 hours.
- Stir in frozen peas. Season with salt and pepper.
- Transfer filling to a pie dish.
- Cover with pie crust and cut slits for steam.
- Bake for 30-35 minutes or until golden brown.
Notes
- Let the pie cool for 10 minutes before serving.
- Serve with a side salad for a complete meal.
