- 1 lb ground turkey
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 cup diced tomatoes
- 1 tsp cumin
- 1 tsp chili powder
- 8 whole wheat tortillas
- 1 cup shredded cheese
- 1/2 cup enchilada sauce
Instructions
- Preheat your oven to 375°F.
- In a skillet, cook the ground turkey until browned.
- Add black beans, corn, diced tomatoes, cumin, and chili powder. Stir to combine.
- Fill each tortilla with the mixture and roll them up.
- Place the rolled tortillas in a baking dish.
- Pour enchilada sauce over the top and sprinkle with cheese.
- Bake for 20-25 minutes until heated through and cheese is melted.
Notes
- You can add vegetables like bell peppers for extra flavor.
- Serve with sour cream or guacamole if desired.
